Step 1Dry roast oats in a non-stick frying pan for 2 minutes and set aside.
Step 2 Chop onion and ginger.
Step 3Heat oil in another non-stick pan and add mustard seeds.
Step 4 When the mustard starts to splutter, add urad dal and cumin seeds and sauté till fragrant.
Step 5Add, ginger, chopped green chilies and sauté for 2 minutes.
Step 6Add onion, carrot, beans, green peas, curry leaves and salt.
Step 7Add ¾ cup of water and boil with a closed lid till the vegetables are cooked.
Step 8Add oats and mix well.
Step 9Reduce heat and slow cook till oats is done.
Serve hot with mint chutney.
